
Miss Pam’s, our flagship oysters, are raised off Bell Point (background)in the Bay River of Pamlico County,NC, which empties into the Pamlico Sound. The Bay River is relatively undeveloped with a much smaller upland drainage than other NC coastal rivers, creating some of the cleanest waters in the state for shellfish mariculture. The surrounding pine/bay tree forest, salt marsh, and sound create a signature merrior, imparting our oysters with a moderate brininess that gives way to a buttery intermission, and ends with notes of summer sweet corn and blue crab. These petite lockets are the perfect size and flavor for eating raw on the half shell but can also be steamed or grilled for less adventurous palettes. The farm is a nexus of coastal life frequently visited by dolphins, rays, crabs, humans, otters, fish, and fowl.
